[Would this fix a brick?]

Say I was doing some flashing and it went wrong and bricked my PSP.

If I made a back-up copy of my flash files, then did the flashing then that lead to a brick, would those back-up flash files unbrick it by replacing them?

yes, it would.
assuming you are running custom firmware, go into rec mode, toggle usb flash0, and replace the resources folder with the backup.
