I'm surprised there's not a sticky for this yet. Here are some simple bulleted facts about the versions so the noobs can read up and shut up.

Homebrew runs on all versions except for 1.51 and 1.52; 1.00 via natural, 1.50 via KXploit, 2.00 via TIFF exploit, 2.01-2.60 via GTA.
There are only two different version downgraders: 2.00 to 1.50, and 1.50 to 1.00. 1.50 to 1.00 only works if you've never updated or downgraded your PSP. Otherwise, it bricks it.
There is no EBOOT signature spoofer (if there was we could call it mr. forge), and unless someone painstakingly decodes an update, there will never be. Still, the thought of it makes me drool.
If you ask anything about PSP ISOs, umd emulators, fastloader, devhook, etc., the topic will be closed and you will be eligible for a ban.
Going up and down versions will eventually brick your PSP.
Version 1.00 was only released in Japan. You're lucky to find one on eBay.
Firmware loader - runs AVC video through 2.00, loads web browser through 2.50, loads 1.00 and 1.50 most stablely. If that's a word.

There is no available "downgrader" for 1.5 -> 1.0. It always bricks.
