How about a simple flight sim? However the only sources for an opensource one is here and might be a little unrealistic in scope:

However there might be other more simple ones that I dont know about....

Yes I know, which is why I said it was probably unrealistic.
But here's another which requires a minimum profile of a 486DX2/66
