THE FOLLOWING CONSOLES HAVE WORKING EMULATORS WITH WORKING GAMES (commercial,demos or what so ever fits you)

PLAYSTATION2..DONT KNOW! PLEASE INFORM!
XBOX/360..DONT KNOW! PLEASE INFORM!
GAMCUBE...DONT KNOW! PLEASE INFORM!
NINTENDO DS..DONT KNOW! PLEASE INFORM!
PLAYSTATION PORTABLE...DONT KNOW! PLEASE INFORM!

DEEZ DAMM INDUSTRIES ARE JUS GETTIN BETTER EVERYDAY TO STOP OUR EMULATION!!! FIGHT BACK :D

Lighten up on the caps lock there man. In terms of whats asked then theres
ePSXe (http://epsxe.com/) for the PSX, not updated for ages but a good emu using plugins for video etc.. highly compatable, theres lots of other emus of course
PCSX2 (http://pcsx2.net/) runs some homebrew stuff, not good enough for playing commercial games yet
CXBX (http://www.caustik.com/cxbx/) is the best bet for xbox atm though itll only run Turok out of the commercial games
Dolphin (http://www.dolphin-emu.com/) does GC with varying succes depending on whats tried with it
DSemu (http://www.double.co.nz/nintendo_ds/dsemu.html) & iDeaS (http://ideasemu.altervista.org/index.php) do the DS running homebrew stuff nicely, iDeaS runs the metroid demo attract mode
PSPE (http://www.emulator-zone.com/doc.php/psp/pspe.html) does PSP homebrew
