Fairly new to everything, so cut me a little slack :)
This probably won't happen but if I wanted to reset/reformat my PSP via the options etc... will it then be homebrew free?
i.e as if it had just been bought brand new?
Just want to know if I ever need to sell it or if I actually want to upgrade to 2.7+ if they make it worthwhile.

If you restore to default settings then your PSP will still have the same firmware, but you will need to re-set the time,date etc
