Is it/will it be possible to use the DS's two processors simultaniously in order to gain a boost in speed for emus and such? Would it be possible to tackle something like a Nintendo 64 emu with both processors?

i doubt/in fact i'm 100% sure that there is no way that the DS can emulate the N64. Emulating requires much more processing power than just running a DS game. So even though you can see the DS running N64 style games don't get confused and think that it is possible for it to emulate the N64.
I would love to someone to prove me wrong though.
A better way to think of it is that the PS2 uses a 233Mhz processor, but if you had a Pentium 233Mhz in a PC and tried to run a PS2 emulator then you would find many problems.
To answer your question...
Yes an N64 emulator would be possible but it would run games at about 10% speed and with no sound. So I doubt anyone would make one. As Tid said it requires a lot more power to emulate something...
So short answer = No
