i was wondering if a 500 Faerienheit soldering gun would be good for soldering on a video gaming console mother board

Yes, that should be fine. Just make sure its nice and clean.

Really you want it too be cooler for chips etc. but you will manage.

I'm not sure about temp rating, but a 15w iron should be enough.
