I recently got the god of war psp demo, and its coming along quite nice(best psp game ive played). Hopefully that will bring other developers to refocus on the psp.

Medal of honor heroes i loved that game but nobody really plays that online anymore.
Jeanne d'Arc is a good PSP game.
Disgaea: Afternoon of Darkness and Castlevania: Dracula X Chronicles are also great.
