Love Hina is my top favorite. I've watched it all at least 4 times, own the perfect collection (11? or is it 9? DVD set) and almost the full manga. I can't help but cry when I watch it and I for some reason think that (when I keep my hair short) Keitaro is what the anime me would look like.
Next in succession would be: Cowboy Bebop, Trigun, Evangelion, Beck, and Detective Academy Q.

Trigun is cool. I'll give you that. The Final Fantasy 4 episode anime was cool.
Full Metal Alchemist isn't bad either.
Unlike most, I've actually put a lot of thought into it, and can fairly confidently say that I'm not gay...or that I've never found a guy I've been attracted to =P.
I would definately have to say Shaman King is my favourite, although It's not very well known (thank you lousy english distributors :mad:). So on a more mainstream note I'd say Full Metal Alchemist.
Oh man, Shaman King was fun. I lover the whole knights thing in the last saga of episodes. When I watch bleach now, the style of the 'quincy' reminds me of them.
The fox box dub of it wasn't so much bad as it was forcibly aimed towards the pokemon (which became the) digimon (which has in more recent times progressed to the) yu-gi-oh fanbase of 8-13 yr olds.
If you like Shaman King, I would look into seeing Hikaru no Go or Hajime no Ippo. Both follow the same kind of pattern (similar to many animes, fight opponents in a somewhat predictable fashion, make friends from enemies, and learn new abilities in the interm) but with Go and boxing respectively.
