Resident Evil. The music made the game that much more creepy, and the moonlight sonata is still a song that I'll listen to any day.

first i'd start with sonic 1, 2, 3, knuckles, adventure 1, and adventure 2. the megaman games all of then had great music especially 8. MGS series had one of the most influencial soundtracks on my life. sword of the Berserk- song~forces 2, among others. Blue Stinger for dreamcast had a masterpiece OST. The Soul Series, all of them. Finally killer instinct one and two, and miscellenous snes games like super adventure island, and wolverine adamantium rage.
The Sega Megadrive Sonic the Hedgehog series. Most amazing soundtracks ever.

A bit far from the mainstream compared to most other suggestions here, but my personal fave has to be the title music from Logistix, a PD game on the good ol' Amstrad CPC. Look it up peeps - quality tune and an excellent game (which wouldn't be out of place on some more modern platforms - hint hint coder types).
Honourable mention goes to the entire Wipeout series.

Quake soundtrack
Diablo music (the first one has some creepy tracks that I could never get tired of).
Legend of Mana soundtrack
Final Fantasy music (no one soundtrack stands out but certian songs from each stand out in my head like the entro to FF8 and Three winged angel from 7).
Oh and of course I love Metroid Metal but I'm not sure that counts since it's a re-make of the original music. Black Mages were also already mentioned but i have to second them they rock.
