    Default SRAM Saving to VMU?

What does that exactly mean; does it the emulator just save to the VMU card?

This type of saving is instead of 'save state'. A saved state allows you to start emulation from the exact point where you left it. SRAM saving is just saving the same sort of save that the original game would have, but onto the vmu instead of to the inside of the cart/into a memory card.
