In all honesty, the only Anime I've watched in a long while, and enjoyed is The Melancholy of Haruhi Suzumiya. Its just crazy enough that I enjoy it.
However, Endless Eight gets a bit repetitive after the 6th iteration....

I feel like watching Cowboy Bebop, myself.
I watched 'She, The Ultimate Weapon' the other week after seeing the set cheap in HMV. All I can say is it's "OK". Nowt amazing, too much wailing and crying for my liking, even though it is character driven. There's very little action. Maybe an acquired taste.
I've always found the Studio Ghibli stuff to be excellent and Evangelion gets a re-watch every couple of years.
I've not seen much of Cowboy Bebop but the movie is quality, excellent stuff.

Also watching some Ecchi/Hentai series LOL, mostly cause they got psp games and I didn't knew about them: Ikkitousen, Kamen no Maid Guy, Queens Blade
Games are almost ok, but Queens blade looks promising (it has rpg elements)

BlueCrab, you should consider acquiring a animelist, it's a fairly easy way to keep track of all the anime you've watched, it's also helpful in discovering new anime as well.
