I have a number of different consoles, some of which (e.g. the 360 and PS2) also have digital audio out - has anybody found a decent, cheap A/V Switch, that takes at least 4 A/V signals (in video/left/right RCA form) and can switch them to a single output, but also with digital audio support?

Otherwise, I think the easiest thing to do will be to buy an analog-only one and attach the digital audio support myself (which should be relatively simple). A unit that only supports coaxial or optical would also be fine as it would hopefully still be fairly simple to make work as they're the same underlying SPDIF.
