Let's see...
Megadrive (with modem)
Dreamcast (with keyboard/mouse)
SNES (with Super GB)
N64
Gamecube (with BBA and GBP)
Game Boy
Game Boy Pocket
Game Boy Color
Game Boy Advance (with an EZF Advance)
Game Boy Micro
DS Lite (with an M3DSS)
PS1
PS2 (with the Linux kit)
PS3
PSP (good ol' OE fw)
PocketStation
Xbox (x3, each differently modded, only one with original DVD/HDD)
Xbox 360
Neo Geo Pocket Color
Wonderswan
Wonderswan Color
Wonderswan Crystal
Tiger game.com (with internet cart)
Philips CD-i
Generation NEX (on its way)
POP Station (adorably awful)
I think that's the lot. All four of the last-gen consoles are softmodded in their own ways (if you can call the DC a softmod :P), simply from curiosity, and often adapted for ease of use (the PS2 is tetchy with DL discs, so I can just do one good rip to the HDD then stop worrying, the GC means I can test my code at home, and my Xbox games are all neatly put away somewhere on a shelf and on a HDD). The DSL spends 90% of its time running homebrew, it's usually used as a DSOrganize PDA. Next acquisitions are planned to be a Wii (when I can find one for RRP, which will be in about a year at least!), a GBC flash cart and/or a method of ripping my own carts, a DC ethernet adaptor when I can find one under £100, and a GBA SP when they've stopped being silly prices. I'm also contemplating networking everything I can and attempting a distributed computing project, with even the DSL contributing, but this is probably far off.
