I like the mint green one.
My favorite color for it than can be achieved thru modding, though, is gold. I got the gold faceplate from coolmods.co.uk.

I'm fine with my good ol' white PSP Phat, though the blue one looks nice, too. If I ever decide to get a Slim (possibly if it becomes easier to make 'em homebrewable), then I'll try to get that one.
